Wes has good information, as he's just totally rebuilt his motor.
One thing that helps, is to be sure your PCV valve (if you have one) is properly closed. You can tell if you pull the hose and the motor speeds up, then it's working properly. If you pull the hose and nothing happens, it's stuck in the open position and it makes a lean idle situation subject to stalling. This is the case on the 427 motors, not sure if you have this or not with your particular carb setup. The Carter had a direct port, the Edelbrock has none, so it requires a hose adaptation.
The other thing is to be sure your motor is properly timed with a timing light. Yes, it sure does make a difference. Then with the air adjustments Wes noted, you can make it idle down nicely IF the carb isn't dirty or otherwise worn inside, with dried out rubber parts, whatever. You'll find a lot of carb stuff here on the forum, and if you need help just let us know and we can direct you specifically to some of the info we may know about and you might have a hard time finding.
