It's only original once so the right thing would be to leave it alone.
There are already more than enough people that would send a car like that to RediStrip and redo everything.

In the other hand an original paint car with most of it in very poor shape does need repainting, i've seen several at shows touting the fact the paint is original even though it's got rust coming through and many areas buffed through to primer.
